There's nothing more loyal than a dog. And Ron's loyalty has always remains steadfast as an unwavering best friend. So it makes perfect sense that Ron's Patronus would come in the shape of a loving and loyal dog. Jack Russel's are also characteristically fearless, a trade that Ron shows throughout the Harry Potter books.
